It contains a lot of research on the Borthwicks in New Zealand, including ... Thomas Borthwick & Co. "Borthwick's Meats" is one of the most well-known Borthwick businesses in the Southern hemisphere. Originally family members were butchers at Ratho on the outskirts of Edinburgh but descendants developed a major meat processing, freezing and exporting business crossing a number of continents. Initially Thomas Borthwick, then a cattle buyer, was based in Liverpool, England. The exact details of establishment of the business in New Zealand are not clear. In 1883 Thomas Borthwick was selling agent for The New Zealand Loan & Mercantile Company. In 1902 Borthwicks bought freezing works from the Waitara Freezing & Cold Storage Company.Then in 1905 they bought freezing works at Portland in south-west Victoria, Australia. A Sir Thomas Borthwick was born 1798 and was from Eddleston. He had set up business in Ratho, married a Margaret Colston Trainer from Stow at St Cuthberts Parish, Edinburgh, on 14th December 1830.
Freezing works, 1880s to the 1970s ... The first shipment of frozen meat left Port Chalmers on the Dunedin, bound for Britain in February 1882. It sparked a major industry after its cargo of frozen mutton and lamb sold in London, within a fortnight of arrival, for more than twice the price it would have got in New Zealand. Exports of frozen meat grew rapidly ? they tripled from 4,300 tons in 1883 to more than 12,000 tons in 1884
- By the 1930s British companies with retail butcher?s shops ? including Thomas Borthwick and Sons, Vesteys and the Co-operative Wholesale Society ? had bought many of New Zealand?s freezing works

In 1928 Thomas Borthwick and Sons bought the Waingawa Freezing Works near Masterton, Wairarapa They already owned or used a number of freezing works in New Zealand and Masterton was to be their New Zealand headquarters from 1930 to 1958.

GORE is a town in the deep south. It is 64km northeast of Invercargill and 70km west of Balclutha.
Dunedin and Invercargill are the nearest cities
As crossing the Mataura River involved a long fording, the locality became known as ?the Long Ford? or Longford.
In 1862 a few town sections were surveyed on the west bank of the river and Longford was named Gore as a compliment to Sir Thomas Gore Browne, an early Governor of New Zealand.
One of the first buildings was Long Ford House an accommodation house opened by local sawmill owner Daniel Morton

Otago Daily Times, 24 Jan 1907 On Tuesday afternoon the brigade was called out to a fire which had broken out in a two-storey brick building in Castle street owned by Mr Strang and occupied by Mr Edward Blee, carpenter. The fire, the cause of which is unknown, originated in one of the bedrooms, and destroyed the window curtains, a bed, and a table, but ?5 will cover the damage (2014 equivalent of $795). The flames were subdued before the brigade arrived. Mr Blee's furniture and effects were insured for ?100 in the Standard office

... The discovery of gold inland from Dunedin in 1861 led to the new city becoming the colony's main industrial and commercial centre.
The successful export of frozen meat provided an extra impetus to Dunedin's importance and growth, as did the establishment of the country's first university, founded in 1869 (read more at link above)

Dunedin is also famous for the HOCKEN COLLECTIONS which was the vigorous collecting and subsequent generosity of a Dunedin doctor, Thomas Morland Hocken (1836-1910)

... As a doctor, and coroner for 22 years, T.M. Hocken became one of the city's best-known figures - 'a neat, dapper little man, with a short-clipped beard and dark lively eyes. Bustling, energetic, intensely industrious, he had a winning personality and infectious enthusiasm.'
Hocken applied his drive and talent to the acquisition of books, newspapers, maps, pamphlets, photographs, pictures and artifacts relating to New Zealand, the Pacific and early Australia. He shared his knowledge widely through lectures, exhibitions, his own books and writings and the important Bibliography of the Literature relating to New Zealand, published in 1909.
In 1897, Dr Hocken offered his fine collection to Dunedin and the people of New Zealand. Public subscription lists opened in 1906, and a Deed of Trust was drawn up by which the Hocken Collection was housed in a special wing added to the Otago Museum, and managed by the University of Otago in trust for the nation. Too ill to attend the opening on 23 March 1910, Dr Hocken died two months later.
