Looking for Hayes of Waterford or South Tipperary, Ireland

My paternal great-grandmother was Mary Ellen HAYES. She was born around 1830, possibly in Waterford, or in South Tipperary. Her parents were Patrick HAYES, farmer, and Mary O'NEILL.

In 1852 or 1853 she married Felix MORGAN, a constable in the Royal Irish Constabulary who was born in Armagh in 1827 and posted to South Tipperary in 1848. They had their first child, Alexander, in 1852-53, but he died shortly after birth.

In 1853, Mary and Felix emigrated to Australia, arriving in Melbourne in January 1854. They had a further five children in Melbourne, of whom two survived.

In 1864, Mary took passage back to Ireland with her two surviving children, Agnes and Thomas, and in December 1864 gave birth to my grandfather, Patrick, at Carrickbeg, South Tipperary. She returned to Melbourne the following year and produced one more child in 1867.

I am looking for any records of Mary in Ireland and the details of any descendents of Patrick and Mary Hayes.
